quinoa/bulgur mix

I don't normally like to mention specific products, but I've really been enjoying the quick-cook Pedon (Merkur) quinoa and bulgur mix that Tesco are selling. It cooks in 10 minutes and 40g is a nice base for a small Quorn/veg stir-fry or lentil/feta salad. You just boil it in plenty of water and then drain it. It always comes out fluffy/tender-crunchy and takes up any flavours you might add to it. I like to throw in a whole clove of garlic, a bay leaf and some Marigold veggie bouillion powder. Yum!

fast cooking, slow cooking

I've been a bit naughty today and added to my already-overflowing collection of kitchen appliances.

Chicken and white bean stew

Even the British summer can accomodate a stew now and again, especially if you can cook it in a pressure cooker to cut down the time.

Black bean and tomato quinoa salad

I've always loved this salad. Now that I'm eating low GI/GL, I may omit the sweetcorn from this recipe and serve side-dish portions alongside a protein and some green salad or other non-starchy vegetables.

Pork and fennel meatballs

I love meatballs. Now that I'm eating low GI/GL, I especially love meatballs without breadcrumbs or other grains in them. These fit the bill. They're nice served with a little wholemeal pasta and/or a big pile of veggies.

Italian-style purple sprouting broccoli

Every year we get a lot of purple sprouting broccoli (PSB to those in the know) in our organic veggie box. This is my favourite thing to do with it.

fledgling blog

I have just returned to a low GI/GL way of eating and wanted to start a brand new blog rather than shoehorn it into my existing food blog. I'm looking forward to creating and sharing new recipes for this way of eating, which seems to suit me very well.
